This marinade is a great way to add a rich flavor to your chicken. In addition to enhanced flavors the a high smoke point with Chosen-Foods Avocado Oil makes going right from the marinade to the grill that much easier by not requiring all the marinade being cleaned off.
Ingredients:
- 4 boneless, skinless chicken breast halves
- ¼ cup Avocado Oil
- 1 Tablespoon dried Oregano
- 1 Teaspoon ground Cumin
- 2 Garlic cloves, minced
- Zest & juice of 1 lime
- Zest & juice of 1 orange
- 1 Teaspoon Kosher salt
- ½ Teaspoon black pepper
Instructions:
- Combine avocado oil, oregano, cumin, garlic, zest & citrus juices in a bowl & whisk to combine.
- Place the chicken & avocado oil mixture in a glass bowl. Turn chicken to coat.
- Cover & refrigerate for a least 30 minutes but not more than 60. Remove chicken & toss out the marinade.
- Season chicken with salt & pepper.
- Grill chicken over medium heat until done. Remove from grill & rest covered loosely for five minutes.
- Serve with avocados as a garnish.
