Grilled Citrus Cumin Chicken

This marinade is a great way to add a rich flavor to your chicken. In addition to enhanced flavors the a high smoke point with Chosen-Foods Avocado Oil makes going right from the marinade to the grill that much easier by not requiring all the marinade being cleaned off.

Ingredients:

  • 4 boneless, skinless chicken breast halves
  • ¼ cup  Avocado Oil
  • 1 Tablespoon dried Oregano
  • 1 Teaspoon ground Cumin
  • 2 Garlic cloves, minced
  • Zest & juice of 1 lime
  • Zest & juice of 1 orange
  • 1 Teaspoon Kosher salt
  • ½ Teaspoon black pepper

 Instructions:

  • Combine avocado oil, oregano, cumin, garlic, zest & citrus juices in a bowl & whisk to combine.
  • Place the chicken & avocado oil mixture in a glass bowl.  Turn chicken to coat.
  • Cover & refrigerate for a least 30 minutes but not more than 60. Remove chicken & toss out the marinade.
  • Season chicken with salt & pepper.
  • Grill chicken over medium heat until done. Remove from grill & rest covered loosely for five minutes.
  • Serve with avocados as a garnish.
